Chia Coconut Mango Pudding

(2 servings)

Ingredients:

1/4 c chia seeds

1 c coconut milk fresh or in the can

1/4 c apples sliced

3/4 c raisins washed and drained

1/4 tsp cardamom

1/2 c date syrup (recipe below)

1/4 tsp cinnamon

Procedure:

Combine all ingredients. Blend until smooth. Garnish with mango slices

Note: if you have no blender, you can let the chia plump up first inside the coconut milk , then combine the spices and mix until well combined. Add the fruits and serve.

Chia Coconut Apple Cinnamon Pudding

(2 servings)

Ingredients:

1/4 c chia seeds

1 c coconut milk fresh or in the can

1/2 of a banana

3/4  c raisins washed and drained

1/2 c date syrup (recipe below)

1/4 tsp cardamom

Procedure:

Combine all ingredients. Blend until smooth. Garnish with apple slices and drizzle with cinnamon powder
